Jasper Hill Farm uses the milk of its single herd of cows for raw milk cheesemaking and has partnered with 3 other community farms to produce the milk needed for their cheese production. These farms are neighbors and are managed under the same regenerative practices that Jasper Hill implements with their herd.
Description: This is an incredibly approachable blue cheese. Creamy foundation with pockets with mild blue funk and tang. This is a perfectly balanced and beautifully refined version of blue cheese.
