You asked for more, and we delivered! This time, we worked with Smokey Buttes Ranch to rescue already packaged chickens from being waste! Farmer Matt has a passion project of breeding a very rare type of chicken called Spackled Erminettes (seriously, it was once thought to be extinct!) in hopes of growing its population back to a healthy size! Preserving heritage breeds like the Erminette helps us maintain higher genetic diversity which is important to our food security, you can learn more about it here.
Matt chooses the best 10% of his chickens to breed. The rest of the ladies he can sell for egg laying, but he can’t sell the males. In the conventional food system, there is no way to get these chickens to consumers. Enter Nude Foods. We provide Erminettes as a super sustainable rescued chicken option for our customers, and provide another important revenue stream for this awesome farmer. We even went to the farm ourselves to see their living conditions — and boy, these were the healthiest and happiest chickens we’ve ever seen!
As a heritage breed, Erminettes are a little different than what you may be used to. They do not have the big breasts of conventional broiler chickens, and are much longer and leaner. Their skin is also a slightly darker color. They are also much slower growing (since they grow at their natural pace) this makes them more flavorful, but slightly less tender than conventional chickens.
Cooking Directions: How to cook a whole chicken
Ingredients: Whole Chicken raised with a small group of their buddies and more then enough space!
Packaging: A whole chicken wrapped in plastic
Storage/Shelf Life: Keep in the Freezer until ready to use. Remove from freezer and defrost 1-2 days in advance. Should last up to 6 months in the freezer!
