Why heritage breeds, you may ask? Frank Reese, the farmer who raises these birds, equates “heritage” to “heirloom.” By eating heritage breeds of poultry, we help preserve and continue on the lineages that have been selected for decades for their genetics, quality, and flavor. Additionally, farmers of heritage breeds tend to pour a different level of care into their work, just by nature of their motive and intention. To put it simply, happy animals with a good life just taste better than those that are factory-farmed, and corn- and soy-fed — and you can feel better eating them, too, knowing that there is a cause behind them that is more uplifting and celebrates the animals’ lives.
The Good Shepherd Conservancy is a non-profit organization committed to its mission of safeguarding biodiversity through the use of Standardbred poultry and historical purebred lines of livestock for agricultural use. They engage in conservation, education, and research and development in collaboration with farmers, poultry producers, scientists, consumers, and culinary professionals.
Frank Reese initated this network because he had a vision for “a world where Standardbred Poultry has not only been saved from extinction, but has also become wildly popular again.” This aligns with our wish for a food system where all consumers have access to nutrient-dense poultry that comes from healthy and contented animals.
Frank’s chickens are slow-growing, vegetarian-fed, and pasture raised to 16 weeks, which is more than double the industry standard. Each chicken is laced with ribbons of sun-yellow fat that self-baste the bird as it renders, resulting in silky meat and crackly bronzed skin.

Preparation InstructionsÂ
Whole Bird Preparation:
1. Take the bird out of the refrigerator an hour prior to cooking.
2. For a basic roast, rub with olive oil or butter, season with salt, pepper, and your favorite herbs like rosemary and thyme. Roast in the middle of a 325°F oven.
3. Cook to an internal temperature of 155°F, remembering that the temperature will continue to rise after leaving the oven.
Calculate about 10 minutes per pound depending on the size of the bird in a 325°F oven.
Ingredients:Â Heritage chicken – whole or individual cuts, based on the option selected
Packaging: Wrapped in plastic film for food safety purposes, and to preserve freshness.
Storage/Shelf Life: Keep in the Freezer until ready to use. Remove from freezer and defrost 3-4 days in advance. Lasts up to one year in the freezer!
Size/Weight:Â All cuts are about 2.2 lbs per package. Whole birds are approximately 4.5 lbs.
