Miso Tahini Soba Ramen

Ingredients

  • 8oz Soba noodles
  • 1TB Olive Oil
  • 1TB Sesame Oil
  • 1TB Ginger
  • 1TB Garlic
  • 1TB Tamari
  • 1TB Sesame seeds
  • 2TB Miso
  • 1/3 cup Tahini
  • 4 cups of Veggie broth
  • 1 small Red onion thinly sliced
  • 1 bunch of Cilantro
  • 1 Lemon

Instructions:

  • Add the onion and a dash of oil to a large pot over high heat.
    Saute the onion for 5 minutes or until it’s slightly translucent.
  • Add the garlic, ginger and miso paste.
  • Saute for 2 minutes until fragrant. If it starts to burn, add a dash of the vegetable stock.
  • Add the broth, tahini, and tamari to the pot and reduce the heat to medium.
  • Let the soup simmer for at least 10 minutes to allow the flavours to develop.
  • If it’s evaporating too quickly, add some water to the pot.
  • Bring it to a boil. Add the noodles to the pot and cook for 6-8 minutes until the noodles are ready.
  • Optionally, add the tofu 5 minutes before serving.
  • Garnish with cilantro, sesame seeds, chili flakes, sauteed greens, and a cooked egg.
