Miso Tahini Soba Ramen
Ingredients
8oz Soba noodles
1TB Olive Oil
1TB Sesame Oil
1TB Ginger
1TB Garlic
1TB Tamari
1TB Sesame seeds
2TB Miso
1/3 cup Tahini
4 cups of Veggie broth
1 small Red onion thinly sliced
1 bunch of Cilantro
1 Lemon
Instructions:
Add the onion and a dash of oil to a large pot over high heat.
Saute the onion for 5 minutes or until it’s slightly translucent.
Add the garlic, ginger and miso paste.
Saute for 2 minutes until fragrant. If it starts to burn, add a dash of the vegetable stock.
Add the broth, tahini, and tamari to the pot and reduce the heat to medium.
Let the soup simmer for at least 10 minutes to allow the flavours to develop.
If it’s evaporating too quickly, add some water to the pot.
Bring it to a boil. Add the noodles to the pot and cook for 6-8 minutes until the noodles are ready.
Optionally, add the tofu 5 minutes before serving.
Garnish with cilantro, sesame seeds, chili flakes, sauteed greens, and a cooked egg.
