Miso Tahini Soba Ramen
Ingredients
- 8oz Soba noodles
- 1TB Olive Oil
- 1TB Sesame Oil
- 1TB Ginger
- 1TB Garlic
- 1TB Tamari
- 1TB Sesame seeds
- 2TB Miso
- 1/3 cup Tahini
- 4 cups of Veggie broth
- 1 small Red onion thinly sliced
- 1 bunch of Cilantro
- 1 Lemon
Instructions:
- Add the onion and a dash of oil to a large pot over high heat.
Saute the onion for 5 minutes or until it's slightly translucent. - Add the garlic, ginger and miso paste.
- Saute for 2 minutes until fragrant. If it starts to burn, add a dash of the vegetable stock.
- Add the broth, tahini, and tamari to the pot and reduce the heat to medium.
- Let the soup simmer for at least 10 minutes to allow the flavours to develop.
- If it's evaporating too quickly, add some water to the pot.
- Bring it to a boil. Add the noodles to the pot and cook for 6-8 minutes until the noodles are ready.
- Optionally, add the tofu 5 minutes before serving.
- Garnish with cilantro, sesame seeds, chili flakes, sauteed greens, and a cooked egg.
