Jasper Hill Farm uses the milk of its single herd of cows for raw milk cheesemaking and has partnered with 3 other community farms to produce the milk needed for their cheese production. These farms are neighbors and are managed under the same regenerative practices that Jasper Hill implements with their herd.
Description: This is a slightly tangy Cabot style cheddar. It is mild in flavor with nutty elements and caramel notes. This has a rustic crystalline and crumbly texture.
