Boba
That’s right, folks. Boba. Black tapioca pearls, also known as boba, are the perfect “bubbles” in bubble tea. They are small, round balls made from tapioca starch for a sweet and somewhat gummy consistency. These are the same boba pearls as those used at gourmet pearl milk tea shops. Also delicious in other desserts. It’s a texture thing!
Cooking Directions:
The water to tapioca ratio is 6:1 (for example, use 6 cups of water for 1 cup of tapioca).
Boil water in a large pot or a rice cooker. Add the tapioca pearls to the boiling water.
Stir the tapioca pearls to keep them from sticking together. Cook at a rolling boil for 15 minutes, stirring occasionally.
Turn off the heat, cover and let sit for 15 minutes.
Rinse cooked pearls with warm water for about 3 minutes and drain.
Cover with brown sugar or honey (optional) and serve.

Tapioca scratch, Water, Starch Acetate, Caramel, Potassium Sorbate, Xanthan Gum, Sodium Carboxymethyl Cellulose, Sodium Polyphosphate, Maple Syrup Flavoring.
