Rye berries are part of the wheat family and have a hearty, nutty flavor and a chewy texture, making them a popular ingredient in various dishes. One of the most appealing aspects of organic rye berries is their culinary versatility. They can be prepared similarly to rice or quinoa, added to soups, stews, breakfast cereal, or ground into flour for baking. For a delicious side dish, sauté cooked berries in a bit of sesame oil with chopped vegetables and tamari.
Cooking Directions: In a saucepan, combine 1/2 cup rinsed rye berries, 1 3/4 cup water, 1/4 tsp. sea salt. Bring to a rolling boil, reduce heat, cover and simmer for one hour or until tender. Drain and set aside to cool or serve immediately.
