What is ‘DUM’ Biryani?
‘Dum’ is a two-step cooking process that is traditionally used to make biryanis. The rice and chicken are cooked separately first in open containers and then cooked together in low heat in a sealed pot (the ‘hundy’). Whole Bird Preparation:
1. Take the bird out of the refrigerator an hour prior to cooking.
2. For a basic roast, rub with olive oil or butter, season with salt, pepper, and your favorite herbs like rosemary and thyme. Roast in the middle of a 325°F oven.
3. Cook to an internal temperature of 155°F, remembering that the temperature will continue to rise after leaving the oven.
Calculate about 10 minutes per pound depending on the size of the bird in a 325°F oven.

Instructions for Use:
Soak. Soak seeds for 6-8 hours to begin germination process.
Rinse. Rinse the seeds, and drain well. Return them to the jar and attach the lid. Place the jar at an angle into a small bowl to catch any excess water and leave it on the counter top, out of direct sunlight.
Sprout. Rinse and drain the seeds two to three times daily, for three days. Your sprouted sunflower seeds are ready when a little shoot appears. Enjoy them like this, or leave them a day or two longer.
Eat! Rinse your sprouts one more time before eating, at this point the hard shell and seed casing should easily come off of the sprouts.

Why did you use rapeseed oil?
We’re always trying to find a balance between sustainability, taste and nutritional health. Oatly has used canola oil (also called rapeseed oil in Scandinavia) in our products for many years, because we believe it is the plant-based oil that best enables us to deliver on those values. In our US operations, we use only non-GMO canola oil that is expeller-pressed with zero hexane involved in the process. In comparison to other plant-based oils, non-GMO canola/rapeseed oil also contains relatively less saturated fat and has a neutral taste profile that lets the flavor of our oats shine.
What’s the difference between the types of oatmilk?
We offer a variety of oatmilks which differ in flavor and fat content based on the product. Our oatmilks all start with the same oat base, to which we add varying levels of oil (like how cream gets added back into cow’s milk). Our Full Fat Oatmilk has a 3.7% fat content while Original has a 2% fat content, which makes the Full Fat extra creamy. The Full Fat also contains 35mg/serving of DHA. Monterey Bay Aquarium Rating
In March 2023, Seafood Watch®, a ratings system from California’s Monterey Bay
Aquarium, gave a red (“avoid”) assessment of the Atlantic Mackerel fishery in
the Bay of Biscay, off the coast of northern Spain. This is where we source our
Atlantic Mackerel.
Why the red rating?
Atlantic mackerel in the Bay of Biscay belong to a much larger
population of mackerel that migrate across the entire Northeast Atlantic, from
the coast of Portugal to Icelandic and Scandinavian waters. There’s no
international agreement on harvest rates, and the overall population of Atlantic
mackerel is being overfished as a result.
Patagonia Provisions’ response to the rating:
The Atlantic mackerel population in Bay
of Biscay itself can sustain responsible harvest,
according to the International Council for the Exploration of the
Sea (ICES), the world’s oldest intergovernmental science association. Likewise,
The Good Fish Foundation, based in the Netherlands,
gives this place-based fishery a green rating.
The trouble happens further north: 90% of the annual Atlantic mackerel harvest comes from northern European waters, from mid-water trawlers and purse seiners,
again according to ICES data. These industrial boats overharvest fish, haul in
bycatch and damage the ocean ecosystem.
Our fishing partners in the Bay of
Biscay use small, family-owned boats and fish with hook-and-line, a highly
selective method that avoids bycatch. We’ll keep monitoring the health of the fishery,
working with our partners in academia. As long as harvests
don’t exceed the limits for a healthy, resilient fishery, we’ll source our
Atlantic mackerel from the fishing families of northern Spain.

The wellbeing of humans is foundational to the COMSA philosophy and educating more than 1,500 producer-members to successfully live in harmony with nature is everywhere at COMSA. It starts with the La Fortaleza, the COMSA biodynamic demonstration farm where the focus of transferring knowledge takes place through week- long seminars called Pata de Chucho (pawprints left by a stray dog), which aptly reveals COMSA’s dogged exploration for human productivity in harmony with nature. The trailblazing ideas for using organic matter to productively cultivate high quality coffee is only a sliver of what COMSA teaches about the power of nature through the Finca Humana philosophy. COMSA dedicates significant funding from the proceeds of coffee sales to run a cutting-edge international school dedicated to filling children’s minds with possibility and training them to be the future leaders of Finca Humana.
What makes it so good? A blend of a lighter and darker roasts of the same coffee from Peru. It’s mild and smooth while still full bodied and very flavorful. Notes of dark chocolate, raisin fruit and a hint of smoke from the darker roast.
100% water processed at a company in Mexico. The green coffee is soaked in water to remove the caffeine, and then soaked in a coffee extract which helps the beans to reabsorb some of the other compounds that contribute to the taste of coffee.

COMSA has also significantly increased the participation of women within the organization, which has resulted in a successful women’s group that has established their own farmers’ market to sell home-grown organic produce.
