Tuesday 12/30/25 (Vegan): Black Eyed Peas Meal with Corn Bread

We’re ready for a long and prosperous future and we want you to be too! We’ve put all the lucky New Years foods we can fit into this meal: Black eyed peas and greens for money, corn bread for gold, onions for rebirth, pomegranate for abundance, and grapes for luck!

Preparation Instructions: Heat up Black Eyed Peas dish on stovetop, stir frequently. Toss salad with dressing, and serve with corn bread on the side.

Ingredients:

Jar 1 – Black Eyed Peas with Greens & Onions: Black Eyed Peas*, Avocado Oil*, Garlic*, Onion*, Collard Greens, Carrots*, Potatoes*, Celery*, Water, Salt, Pepper*

Tuesday 12/16/25 (Vegan): Roasted Vegetables with Pearled Couscous

Perfectly savory and filling, you can enjoy this warm or eat it as a cold grain salad! These delicious hearty veggies have all sorts of beneficial nutrients like Vitamin A, which supports your immune system, and magnesium which lowers stress levels and inflammation. And it all comes together with a bright, light, lemon vinaigrette.

Preparation Instructions: Heat couscous and vegetables separately in a pan. Serve together and top with parmesan and dressing.
