‘Dum’ is a two-step cooking process that is traditionally used to make biryanis. The rice and chicken are cooked separately first in open containers and then cooked together in low heat in a sealed pot (the ‘hundy’). The word ‘dum’ comes from the second step, which literally means ‘slow cooking in a sealed container’. However, due to time and other constraints most biryanis available at restaurants are sautéed chicken and rice dishes. Hundy’s uses the original process to give their biryani its unique flavor.
