Asian Fusion (Vegan & GF): Pad Thai
Who doesn't love Pad Thai? We're keeping this real simple with broccoli, peas, carrots, tofu, peanuts, rice noodles, lime, and cilantro - exactly as it should be! The perfect weeknight meal to please all!
To Prepare: Combine tofu and veggies with noodles and heat on the stove. Plate and top with peanut, cilantro and a squeeze of lime

The perfect summer dish: Melon gazpacho, crunchy croutons, a hearty farro and chickpea salad.

Chef’s Choice (Vegan & GF): Roasted Veggie Bowl with Brown Rice
We bring you, perhaps the most scrumptious and nutritious bowl you've ever eaten. Compared to white rice, brown rice has a much lower glycemic index so it doesn't cause blood sugar to spike, and can decrease your risk of developing Type 2 Diabetes. Plus we've paired it with a rainbow of hearty veggies to add in tons of nutrients while being as delicious as possible!
To Prepare: Enjoy hot or cold. Layer in your bowl with greens on the bottom, then the grains, then the veggies and top with dressing!

Asian Fusion (Vegan & GF): Panang Curry w/ Tofu
Panang Curry is a thick Thai curry accented with peanut butter, giving it a greater depth of flavor and luscious texture. We also took the liberty of making you a scrumdiddlyumptious salad with edamame, peanuts, carrots and cucumber.
To Prepare: Heat curry and rice separately. Serve curry over rice. Toss salad with dressing.

This is one of our most popular meals EVER and we think it's the perfect way to eat a salad. You've got your base of greens, topped with a rainbow of veggies and delicious sautéed white button mushrooms. Then you've got soy-free tempeh for protein, and our famous vegan ranch to smother everything in. Delicious? We think so.
To Prepare: Toss it all together and eat up!
