Chef’s Choice (Vegan & GF): NACHOS! With Meati

Nachoooooos! Need we say more? Wait – you don’t think nachos are a meal? Think again. These nachos are loaded with Meati, beans, veggies, and house-made vegan queso. Plus, a healthy serving of our house-made salsa. You’ll be stuffed, but you’ll also want more, because… Nachoooos!!!

Preparation Instructions: Arrange chips in a single layer on a baking sheet. Douse in queso, sprinkle on the beans and veggies and pop in your 400 degree oven for 8 minutes. When it’s good and toasty, pour on the salsa and enjoy!

Ingredients:

Asian Fusion (Vegan & GF): Pad Thai with Tofu

Who doesn’t love pad thai??? We’re keeping this real simple with broccoli, peas, carrots, tofu, peanuts, rice noodles, lime, and cilantro – exactly as it should be! The perfect weeknight meal to please all!

Not vegan? Get this with beef instead of tofu in our Meal of the Week with MEAT

Preparation Instructions: Combine tofu and veggies with noodles and heat on the stove. Plate and top with peanut, cilantro and a squeeze of lime.

Soup of the Week (Vegan & GF): Green Goddess Soup with Arugula Beet Salad

You deserve to eat like a goddess and all these greens will make you feel like one too. One of our most popular soups, topped with a fresh herbed cucumber salad, perfect for summer. Served with a arugula beet salad.

Preparation Instructions: Heat soup and top with cucumber salad. Toss arugula salad with dressing.

Chef’s Choice (Vegan): Middle Eastern Mezze Platter

You won’t find falafel this good anywhere else west of the Atlantic. Plus, each serving boasts 13 grams of protein and 5 grams of fiber. Add in a healthy serving of cucumber salad, and tabbouleh and drown it all in our lemon tahini sauce and you’ve got yourself one deliciously healthy meal.

Preparation Instructions: Heat falafel in oven at 350 for 8 minutes. Arrange on a plate next to the cucumber salad and tabbouleh and pour sauce over everything.

Ingredients:

We know you don’t want hot noodles when its hot out, so we’re giving you the most delicious, peanutty, vegtastic cold noodle salad with a sweet and summery mango dessert. Your tastebuds will thank you!

Preparation Instructions: Enjoy cold! Top your noodles with the veggies and sprinkle with crispy onions. Finish your meal with the mango pudding.

Preparation Instructions: Heat the soup and top with pumpkin seeds. Toss salad with dressing and serve.
