Chef’s Choice (Vegan & GF): Sweet Potato and Cauliflower Tacos
The most flavorful, delicious vegan tacos you’ll ever try! Sometimes people say vegan tacos aren’t filling, but these are packed with refried beans and filling sweet potato to keep you satisfied. Top them with our house-made southwest slaw and salsa and your tastebuds are in for a treat!
Preparation Instructions: Heat your tortillas and filling, assemble you tacos and top with salsa and coleslaw!
Ingredients:

Remember when you were a kid and your parents would get chinese food from the grocery store and it was the best thing ever? This is like that, but so so much better. Better because we use fresh, organic ingredients. Because we give you as much tofu and vegetables as noodles. And better because we also give you a delectably healthy salad to keep those carbs company. Indulge in your nostalgia while treating your tastebuds and serving your health.
Preparation Instructions: Heat vegetables and noodles separately. Toss salad with dressing.

Chef’s Choice (Vegan): Black Eyed Peas Meal with Corn Bread
We’re ready for a long and prosperous future and we want you to be too! We’ve put all the lucky New Years foods we can fit into this meal: Black eyed peas and greens for money, corn bread for gold, onions for rebirth, pomegranate for abundance, and grapes for luck!
Preparation Instructions: Heat up Black Eyed Peas dish on stovetop, stir frequently. Toss salad with dressing, and serve with corn bread on the side.

Asian Fusion (Vegan & GF): Yellow Curry with Asian Salad
Think you’ve had yellow curry before? Think again. This curry is so yellow, you might even call it orange. Sweet potatoes, carrots…and of course chickpeas for protein. Pair that with an asian mixed green salad and you’ve got all our favorite colors in one dish.
Preparation Instructions: Heat the curry and rice separately. Serve curry with rice. Toss salad with dressing and serve.
