10/3 Chef’s Choice (Vegan): Mac and Cheese with crispy onions, fresh parsley and a killer salad.
To Prepare: Heat mac on the stove or in the microwave, top with parsley and crispy onions. Toss salad with dressing.
Ingredients: *Cashews, Roasted Red Pepper, *Smoked Paprika, Salt, *Nutritional Yeast, *Cumin, and *Garlic. (*=Organic)
9/26 Chef’s Choice (Vegan & GF): Crunchy Power Salad – This salad could feed an army, make them realize we really shouldn’t be fighting anyway, and there will still be some left over to share with their new friends across the battlefield. We start with a generous helping of fresh mixed greens, then give you a rainbow of toppings that cover all your nutritional needs for the week: shredded carrots and beets, shaved radish, cucumber, snow peas. And double protein – marinaded tempeh, and roasted sunflower seeds. Finally, a creamy dill dressing brings it all together.
To Prepare: Top your greens with the abundance of vegetables, and crunchy sunflower seeds, toss with the creamy dill dressing – feel good about your choices.
