Tuesday, 1/20/25 (Vegan & GF): Pupusas with Slaw and Salsa
If you’ve been to the Boulder farmers market you’ve probably tried pupusas, and this week these are made by a guest chef FROM the famous Pupusas Familia! If you’ve never tried delicious dish made of a corn flatbread stuffed with fillings and served with slaw and salsa. It’s the national dish of El Salvador, and the flavors are enjoyed around the world.
Preparation Instructions: Heat the pupusas and black beans, top with salsa and slaw.
Ingredients:
Jar 1 – Pupusas: Masa Harina (White Corn* Treated with Hydrated Lime), Black Beans (Black Beans, Water, Salt), Corn, Water, Olive Oil, Salt
Jar 2 – Black Bean Salsa: Black Beans, Tomato, Red Onion, Cilantro, Sweet Corn, Salt, Olive Oil
Jar 3 – Coleslaw: Cabbage, Carrots, Jalapenos, Red Onion, Dried Oregano, Chile de Arbol, Apple Cider Vinegar, Salt, Water

Tuesday, 1/13/25 (Vegan & GF): Veganuary Protein Bowl
Are you participating in veganuary? (Vegan January) Beans and rice together are a complete protein, giving your body all the protein, nutrients, and amino acids you need without any meat. We’ve added soy-free tempeh for even more protein, and veggies and herbs for deliciousness. Top it with crispy onions for an irresistible bite.
Preparation Instructions: Heat the beans and rice then top with veggies and crispy onions. Enjoy the cucumber salad on the side.
